Cinnamon Streusel Coffee Cake

Ingredients
- 1 cup non-dairy milk
- 1 tbsp unsweetened applesauce
- 1 tbsp non-dairy yogurt
- 1 tsp apple cider vinegar
- 1/3 cup sugar
- 1/4 oil
- 1 tsp vanilla extract
- 1/2 tsp of almond extract
- 1 1/2 cups of flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- Streusel topping
- 1/2 cup flour
- 1/3 cup brown sugar
- 1/2 tsp salt
- 3 tsp cinnamon
- 1 tbsp softened vegan butter
- 2 tbsp coconut oil
Directions
- Step 1
- Combine non-dairy milk, applesauce, non-dairy yogurt, apple cider vinegar, sugar, oil, vanilla extract, and almond extract in a bowl until the sugar is dissolved.
- Step 2
- In a separate bowl, mix together flour, baking powder, baking soda, and salt. Fold in the wet ingredients until just combined.
- Step 3
- In another bowl, make the streusel topping with by adding all the ingredients and mix with your fingers until it becomes a crumbly consistency.
- Step 4
- In a loaf pan, pour half the batter and spread evenly, sprinkle 1/3 of the streusel mixture on top, and then cover with the rest of the batter. Spread the rest of the streusel mixture evenly on top of the cake batter.
- Step 5
- Bake at 350 degrees for 40 minutes, and enjoy!
