Cucumber Dill Salad

Ingredients
- 2 cucumbers
- ½ red onion
- ¼ cup rice vinegar
- 2 tbsp sugar
- 1 tsp black pepper
- ½ tsp salt
- 3 tbsp dill chopped (dried or fresh)
Directions
- Step 1
- Begin by slicing cucumbers into 1/4 inch rounds and red onions into thin slices. Add to large bowl
- Step 2
- In a separate small bowl, whisk rice vinegar, sugar, salt, and pepper until the sugar is all dissolved.
- Step 3
- Pour the vinegar mixture over the cucumbers and onions, add dill, and toss until everything is evenly coated. Cover bowl and refrigerate for at 45 minutes to 1 hour.
