Miso Butter Japanese Sweet Potato

Ingredients
- 1 Japanese sweet potato
- 1 Tbsp plant-based butter, softened
- 1 1/2 Tbsp white miso
- chopped scallions, for garnish
- sesame seeds, for garnish
Directions
- Step 1
- Cut the Japanese sweet potato into rounds and bake at 425º for 30-40 mins, flipping halfway, until golden on both sides.
- Step 2
- Meanwhile, in a bowl mix together the softened plant butter white miso until it forms a mixed paste.
- Step 3
- Top the roasted sweet potato rounds with the miso butter, chopped scallions, and sesame seeds. Enjoy!
