I really don’t think there’s anything more satisfying than eating food that you’ve grown yourself. And especially for this recipe, that romaine came from a head that I had previously purchased a regrew on my window sill! Being stuck at home, I’ve really enjoyed my small apartment garden as a way to not only enjoy some outside time and get much-needed Vitamin D, but also savoring just how fresh my herbs and other harvests taste You can really taste the difference for sure. That’s why I also really love going to my weekly local farmers market, where I can indulge in that fresh taste without having to put in the work…plus we love to shop small and shop local!
The peach and heirloom tomatoes are just a few finds from my recent farmer’s market haul, and their sweet juiciness paired perfectly with the other additions on this salad. I also think I accidentally may have aged my balsamic vinegar… I bought this bottle from Costco over a year ago and it’s way sweeter and more syrupy than usual. But no complaints on my end, that’s exactly how I like my balsamic!
When eating this salad, you’ll be transported to a summer chateau in Italy or a vineyard in Napa- it’s fancy, flavorful, and oh so simple. Hope you enjoy!
