Miso Butter Japanese Sweet Potato

A super simple appetizer that's bursting with umami flavor.

Ingredients
  • 1 Japanese sweet potato
  • 1 Tbsp plant-based butter, softened
  • 1 1/2 Tbsp white miso
  • chopped scallions, for garnish
  • sesame seeds, for garnish
Directions
Step 1
Cut the Japanese sweet potato into rounds and bake at 425º for 30-40 mins, flipping halfway, until golden on both sides.⁠
Step 2
Meanwhile, in a bowl mix together the softened plant butter white miso until it forms a mixed paste.
Step 3
Top the roasted sweet potato rounds with the miso butter, chopped scallions, and sesame seeds. Enjoy!
