Breakfast Stuffed Sweet Potatoes

Ingredients
- 1 sweet potato
- 1/2 apple, cored and chopped
- 1/2 tsp pumpkin pie spice
- toasted pecans
- nut butter
- maple syrup
- chia seeds
Directions
- Step 1
- Poke a sweet potato with a fork a couple of times, wrap in a damp paper towel, and microwave for 5 minutes.
- Step 2
- Meanwhile, add the chopped apple to a small pan over medium heat with a bit of pumpkin pie spice and a splash of maple syrup. Saute until the apple begins to soften and brown and becomes a bit more sticky.
- Step 3
- Slice the sweet potato down the middle and fill with the stewed apple and pecans, and top with peanut butter, maple syrup, chia seeds, and pumpkin pie spice.
