Jackfruit Carnitas Tacos

The perfect taco Tuesday recipe.

Ingredients
  • 1 can of jackfruit
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 2 tsp smoked paprika
  • 2 tsp cumin
  • 1 tsp cayenne
  • 1 tsp dried oregano
  • 1/4 cup vegetable broth
  • 1/2 lime, juiced
  • 1 tbsp maple syrup
  • corn tortillas
  • shredded cabbage
  • corn
  • sliced avocados
  • fresh cilantro, chopped
Directions
Step 1
Drain and rinse 1 can of jackfruit. Chop into shreds.
Step 2
⁠In a large pan, sautee the red onion and minced garlic until the onion begins to brown, 6-8 minutes. Add chopped jackfruit, smoked paprika, cumin, cayenne, dried oregano, and a pinch of salt, stirring until spices coat the jackfruit evenly. Then add the vegetable broth, juice from 1/2 a lime, and the maple syrup. Stir, and cover for 5 minutes. After all the liquid has evaporated, remove from heat.⁠
Step 3
Preheat an oven to 425º. Transfer jackfruit mixture to a parchment-lined baking sheet and bake for 20 mins, stirring halfway. Then remove the baking sheet, shred jackfruit chunks with two forks and return to your oven to broil for an additional 10 minutes or until the edges of jackfruit are just starting to turn crispy.⁠
Step 4
Assemble the tacos with corn tortillas, shredded cabbage, more diced red onion, corn, avocado, and fresh cilantro (or whatever taco toppings you prefer!)
